Ingredients:
● 5 cups riced cauliflower, fresh or frozen, thawed, and squeezed dry
● 1 1/2 cups shredded mozzarella cheese
● 1/2 cup grated Parmesan cheese
● 4 large eggs
● 1/2 cup almond flour, or other low-carb flour
● 1/2 teaspoon garlic powder
● 1/2 teaspoon onion powder
● 1/2 teaspoon kosher salt
● 1/4 teaspoon black pepper
● 1 cup full-father bed cream cheese, for serving
● 4 sunny-side-up eggs, for serving
● Chopped fresh chives, for garnish
Directions:
- Heat waffle iron and lightly grease with cooking spray.
- Combine cauliflower, mozzarella, Parmesan, eggs, almond flour, garlic powder, onion powder, salt and pepper in a medium bowl.
- Spoon about 1/2-1 cup of cauliflower mixture into preheated waffle iron, spreading evenly.
- Cook until golden-brown and crispy, about 6-9 minutes, or according to waffle iron instructions. Repeat with remaining batter.
- Once waffles are made, top with a generous amount of cream cheese and egg. Garnish with chives and serve.
Tip: To make your own herb cream cheese spread, combine 4 ounces of full-fat cream cheese with 3 tablespoons of chopped mixed herbs, like chives, parsley, dill or thyme, in a small bowl until smooth. Add salt and pepper, to taste.
