No Bake Energy Bites

Ingredients:

● 1 cup old-fashioned rolled oats
● 1/4 cup ground flaxseed
● 1/4 cup hemp seeds
● 1/4 cup shredded unsweetened coconut, plus more for topping
● 1/2 cup creamy peanut butter
● 1/4 cup honey
● 1/4 cup mini chocolate chips, optional

Directions:

1. Combine oats, flaxseed, hemp seeds, coconut, peanut butter and honey in large bowl. Stir
until completely combined.
2. Fold in chocolate chips and portion mixture into tablespoon-sized balls.
3. Roll each ball in additional coconut and place onto parchment-lined baking sheet.
4. Transfer to refrigerator and chill for at least 30 minutes until firm. Serve and enjoy.
Tip: Substitute almond butter for peanut butter, or substitute maple syrup or agave syrup for
honey.

Tip:

Store energy bites in an airtight container for up to two weeks.
