Ingredients

For the Hot Honey Glaze

  • 1 tablespoon honey
  • 1–2 teaspoons hot sauce, such as sriracha
  • 1 teaspoon low-sodium soy sauce or tamari
  • 1 teaspoon rice vinegar or lime juice
  • 1 teaspoon water

For the Bowl

  • 1 tablespoon extra-virgin olive oil
  • 4 oz boneless, skinless chicken breast, cut into ½-inch cubes
  • ½ cup cooked jasmine rice
  • ¼ cup shelled edamame
  • 2 tablespoons chopped green onions, plus more for garnish
  • ½ teaspoon sesame oil, for garnish
  • 1 tablespoon sesame seeds, for garnish

Directions

  1. Make the hot honey glaze. Whisk together the honey, hot sauce, soy sauce, rice vinegar, and water in a small bowl until smooth. Set aside.
  2. Cook the chicken. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and sear on all sides until browned and cooked through, about 5–7 minutes. Add a few spoonfuls of the glaze and toss to coat the chicken.
  3. Assemble the bowl. Add the cooked rice to a serving bowl and top with the edamame and glazed chicken. Drizzle with the remaining glaze and sesame oil. Garnish with green onions and sesame seeds, then serve.

Tip: To add more fiber and nutrients, top your bowl with a handful of shredded cabbage or steamed broccoli.
