Ingredients:
● 4 (6 ounces each) salmon filets
● 2 cups (8 ounces) Brussels sprouts, trimmed and halved
● 2 medium carrots, sliced into sticks
● 2 tablespoons maple syrup
● 1 tablespoon white miso paste
● 2 tablespoons olive oil
● Toasted sesame seeds, for garnish
● Chopped fresh green onions, for garnish
Directions:
1. Preheat oven to 400°F. Line baking sheet with parchment paper.
2. Whisk together maple syrup, miso and olive oil in small bowl until combined.
3. Place carrots and Brussels sprouts onto prepared baking sheet and toss with half of
maple miso glaze. Place salmon filets onto baking sheet with vegetables and brush with
remaining glaze. Roast until vegetables are fork tender, and salmon reaches an internal
temperature of 145°F, about 10 to 15 minutes.
4. Garnish with sesame seeds and green onions and serve.
