Salmon Sandwiches with Dill Yogurt Sauce

Serves: 4
Ingredients:
● 4 salmon fillets, about 6 oz. each, skin removed
● 1 tablespoon olive oil
● 2 teaspoons kosher salt, divided
● 1 teaspoon black pepper, divided
● 1/2 cup plain Greek yogurt
● 2 tablespoons chopped fresh dill
● 1 tablespoon lemon juice
●1 teaspoon lemon zest
●1 small garlic clove, grated
● 4 brioche burger buns, lightly toasted
● 1 cup arugula
● 1 avocado, peeled, pitted and sliced
● 1/2 cup pickled red onions
Directions:
- Set a grill or grill pan over medium high heat, about 375°F.
- Pat salmon fillets dry with paper towels and rub with olive oil, 1 teaspoon of salt and ½ teaspoon pepper. Grill fillets until salmon reaches an internal temperature of 145°F, about 4-5 minutes per side.
- Meanwhile, combine Greek yogurt, dill, lemon juice, lemon zest, garlic, remaining salt and pepper in a small bowl until smooth.
- Onto the bottom half of each bun place a salmon fillet. Top generously with a spoonful of yogurt sauce. Top with arugula, avocado, pickled red onion and top bun. Serve and enjoy.
Tip: To bake the salmon, place onto a parchment-lined baking sheet and bake at 375°F until the salmon is opaque and flakes easily with a fork, about 12-15 minutes.
