Fig, Goat Cheese & Arugula Chicken-Crusted Pizza

Ingredients:

●1 lb ground chicken

●1/2 teaspoon garlic powder

●1/2 teaspoon onion powder

●1/2 teaspoon dried oregano

●1/4 teaspoon salt

●1/4 teaspoon black pepper

●3 tablespoons fig spread, or fresh

●3 oz goat cheese, crumbled

●3 slices prosciutto, torn into pieces

●2 cups fresh arugula

●Balsamic glaze, optional, for garnish

Directions:

  1. Preheat oven to 400°F. Line a baking sheet or pizza stone with parchment paper or aluminum foil.
  2. Combine chicken, garlic powder, onion powder, oregano, salt and pepper in medium bowl.
  3. Press chicken mixture evenly into a thin, round or rectangular pizza crust shape on prepared baking sheet. Make edges slightly higher to imitate crust.
  4. Bake the chicken crust until the center is cooked through and the edges start to brown, about 15-20 minutes.
  5. Remove from oven and top with fig spread in an even layer. Sprinkle with crumbled goat cheese and prosciutto and return to oven. Bake until cheese is melted, an additional 5-7 minutes.
  6. Remove from oven and top with fresh arugula. Drizzle with balsamic glaze and slice before serving.

Tip: Use fresh figs when they are in season and available during early summer to early fall.
