Ingredients:
●1 lb ground chicken
●1/2 teaspoon garlic powder
●1/2 teaspoon onion powder
●1/2 teaspoon dried oregano
●1/4 teaspoon salt
●1/4 teaspoon black pepper
●3 tablespoons fig spread, or fresh
●3 oz goat cheese, crumbled
●3 slices prosciutto, torn into pieces
●2 cups fresh arugula
●Balsamic glaze, optional, for garnish
Directions:
- Preheat oven to 400°F. Line a baking sheet or pizza stone with parchment paper or aluminum foil.
- Combine chicken, garlic powder, onion powder, oregano, salt and pepper in medium bowl.
- Press chicken mixture evenly into a thin, round or rectangular pizza crust shape on prepared baking sheet. Make edges slightly higher to imitate crust.
- Bake the chicken crust until the center is cooked through and the edges start to brown, about 15-20 minutes.
- Remove from oven and top with fig spread in an even layer. Sprinkle with crumbled goat cheese and prosciutto and return to oven. Bake until cheese is melted, an additional 5-7 minutes.
- Remove from oven and top with fresh arugula. Drizzle with balsamic glaze and slice before serving.
Tip: Use fresh figs when they are in season and available during early summer to early fall.
